Homebrew: Extra Special Bitter

Today I got into the 2005 Brewing Season for real. This time was an Extra Special Bitter. This recipe was the first one that I put together on my own after looking to see how several different ESB's were put together. I have to admit that I got the recipe from more experimentation than knowledge of the outcome, so hopefully this one turns out good.Last batch I made I tried to use the counter-flow chiller but I couldn't get it flowing properly. After last time I modified my manifold, the manifold allows the spigot to drain from the bottom of the kettle. Before I brewed today I tested that I could get a good flow working and it worked like a charm. When it came time to use the chiller flow also started like a charm. I also put on the manifold after the water was in the kettle, maybe the reason it didn't flow last time was that there was air in the manifold and spigot that kept if from flowing.The other thing that I need to improve on is controlling the flow of the water through the chiller. At full blast the chiller wastes too much water and the water wasn't all that hot, meaning that a slower flow wold waste less water and do the same job. I anticipated that I would want to easily scale back the flow so I used the garden hose spray nozzle between the hose and the chiller. but it was very hard to control and even the slightest spray seemed to be just enough, to too much. I'm going to install some sort of valve on the chiller that I can set and it will stay. I also would like to install a thermometer on the output of the chiller so I can easily see which way to adjust the flow.Oh and the screw up this time is that I forgot to take an original gravity reading before I pitched the yeast.Here is the promash recipe
